Why men shouldn’t shop at Costco alone

A twisted ankle, a visit to the emergency room and an air cast boot later, I finally made it to the boat tonight.

Captain Jeff has been here for a few days already to get everything ready and also do the grocery shopping (yikes)! I don’t know about you, but when my husband goes to Costco by himself, we usually end up with enough food for an army for a month. I cringe every time he tells me he’s going there. I did give him a list of stuff to buy which included a couple of peppers. Not 7 big peppers and 12 small ones, lol! Our fridge on the boat is not huge so I don’t know where he thinks all this is going to be stored.

It’s going to take a near miracle to get all this in there.

What I have found helpful is cutting the vegetables up in pieces (we eat a lot of stir fries anyway) and storing it in freezer bags in the fridge. This would work on a boat and RV but also at home. They take up way less space this way and most of the prep is done when you start cooking.
More time for me to have a cocktail on the back deck.

Anyway, the veggies are all stored and packed away in the fridge and we are ready to go. First stop Fossil Bay at Sucia in the beautiful San Juan Islands. One of our favourite boating destinations.
